I’m not much of a coffee drinker, but I do enjoy hot tea and the occasional latte.
Recently I tried Starbucks new Chocolate Chai Tea Latte for the first time. It was tasty, but I know it had corn syrup and other not so great for you ingredients. A friend shared a homemade version with me (thanks Carina! 🙂 ), and I adapted it to use coconut milk and sucanat. I think the flavor’s even better, and it’s simple to make, not to mention easier on the budget!
Here’s how:
- 1 cup unsweetened coconut milk
- 1 cup water
- 2 tea bags (either black or oolong or one of each)
- 1 tbs cocoa powder
- 2 tbs sucanat (adjust to taste)
- 1/2 tsp Chai spice (see recipe below)
Bring the coconut milk and water to a boil and then steep the tea bags in the mixture for about 4 to 5 minutes. Meanwhile mix the cocoa powder, sucanat, and Chai Spice together. Remove the tea bags and stir in the cocoa mixture. Pour it in mugs and enjoy!
This recipe makes two servings, so half it for a single serving. I have plans to try it with real milk and other natural sweeteners too. The original recipe from my friend used almond milk and stevia. If you experiment, please let me know how it turns out for you!
Chai Spice Mix
- 3 tbs cardamom
- 3 tbs cinnamon
- 4 tsp ground cloves
- 2 tsp nutmeg
- 1/4 tsp cayenne pepper
- 2 tsp allspice
- 4 tsp ground ginger
Mix together and store in an 8oz canning jar.
 A simple to make, delicious, chocolatey, spicy-sweet drink for chilly winter evenings!
