Yes, I realize the name is a mouthful, but it’s necessary to give an accurate description of these scrumptious little things!! These quick, easy treats are a favorite around our house. They’re Karate Kid’s (12) go-to recipe when he wants to make a snack or dessert for guests, and he can do it without any assistance. Not only are they grain-free and full of protein and nourishing ingredients, they’re super simple and can be whipped up in less than ten minutes!
And did I mention they’re delicious?
- 1 stick grass-fed butter
- 1/2 cup raw, local honey
- 1/2 cup raw whole milk
- 1/3 cup cocoa powder
- 2 cups unsweetened shredded coconut
- 1 cup natural peanut butter
Melt the butter in a saucepan. Stir in the honey, milk and cocoa powder. Bring the mixture to a boil and cook for 1 minute, then turn off the heat and stir in the shredded coconut and peanut butter. Drop the mixture by rounded spoonfuls (my cookie scoop works perfect for this!) onto a parchment paper covered cookie sheet and freeze until set.
Once set, you can store them in a storage container of your choice. We store ours in a container in the freezer to keep them nice and firm. This makes a nice size batch, in the neighborhood of fifty “bites”, though your mileage will vary depending on what kind of scoop/spoon you use.
These can also easily be made dairy-free by substituting coconut oil and coconut milk for the butter and milk.
