So Easy Hamburger Rice Skillet

This is such a simple, cheap dish to make, and very hearty! I always double it and never measure the rice or veggies…it fills my large cast iron skillet and gives us enough leftovers for another meal. There are endless variations…you can basically throw any veggies you have on hand in it. I almost always use rice leftover from another meal. When I know I’m planning to make this, I make extra rice to have on hand for it. I use brown rice, soaked and cooked according to Nourishing Traditions methods.

Ingredients
½ to 1 pound ground beef or ground turkey
1 onion — sliced
2 cups cooked rice (leftover)
8 ounce can tomato sauce or 1 cup chopped tomatoes (canned or fresh)
16 oz bag mixed frozen veggies
1/2 cup water
Salt and Pepper to taste
1/2 cup shredded cheese
Instructions

In a large skillet fry the hamburger or turkey and onion until the meat is uniformly grey and brown, and the onion is tender and fragrant. Drain off any fat if necessary (I always have my meat pre-browned so add the onion raw…it works fine this way). Add the brown rice, tomato, veggies, water, salt and pepper. Mix it all up, breaking the rice into small pieces if it clumps. Cover the skillet and simmer for 10 minutes. Add a little more water if necessary. Sprinkle the cheese over top and serve.
