Fall Festival: Favorite Fall Recipe…Pumpkin Chip Muffins

This Fall Festival has been so much fun! This week so far we’ve talked about how we prepare our homes for the season, family fun, and family traditions. Now it’s time to share a favorite fall recipe.

I’m a sucker for sweets and baked goods, and pumpkin has always been a favorite of mine…pumpkin pie, pumpkin bread, pumpkin soup….anything pumpkin! So, I’m sharing my family’s very favorite pumpkin chocolate chip muffin recipe.

I can’t even remember where I got the first version of this recipe. Over the years I’ve adapted it to use fresh whole wheat flour and honey, and I prefer to make it as muffins, although the original recipe had it as loaves. I always add a generous amount of nuts, and have made it using cinnamon or butterscotch chips instead of chocolate (although chocolate chips are still my favorite…big surprise there, right?!) It makes an exceptionally moist, rich, delicious muffin. I frequently leave the glaze off…they’re still super tasty without it! The entire family loves these muffins…we eat these for breakfast, dessert, snacks…anytime we can get away with it! They smell fantastic while they’re baking too!

Pumpkin Chip Bread/Muffins
1 ¾ cup fresh whole wheat pastry flour
1 tsp baking Soda
1 tsp cinnamon
½ tsp nutmeg
¼ tsp ginger
¼ tsp cloves
½ cup unsalted butter
½ cup honey
2 eggs
¾ cup canned pumpkin
1 cup chocolate chips
¾ cup nuts — optional

Cream together butter and honey, add eggs.

Add combined dry ingredients alternately with pumpkin, beginning and ending with dry ingredients.
Fold in chocolate chips and nuts.
Bake in 2 greased and floured loaf pans at 350 for 45-50 minutes or muffin pans for 35 minutes.
Remove from oven and let cool for 5 minutes. Take out of pans and cool on a rack.
While still warm, drizzle on glaze (1/2 cup powdered sugar, 1 tbsp milk, 1/8 tsp nutmeg, 1/8 tsp cinnamon).
