Ingredients
1 lbs ground sirloin
¼ cup taco seasoning mix (or 1 pkg…I use bulk)
6 oz salsa
16 oz canned kidney beans — undrained
15 oz canned black beans — undrained
14 ½ oz diced tomatoes — undrained
pinch — sugar
Instructions
Brown ground beef in skillet, drain.
Combine all ingredients in slow cooker.
Cover. Heat on High until mixture come to a boil. Reduce heat to Low. Simmer 1 1/2 hours.
To reduce liquids, continue cooking uncovered.
Top individual servings with choice of shredded cheese, onions, sour cream, guacamole, etc.
NOTES : I usually have my meat pre-browned and frozen to make this quicker.
I sometimes substitute half ground turkey.
I usually cook it on Low or Medium for several hours.
I usually serve it over Fritos or rice.
It works well for large groups (I always at least double it), I get raves every time I make it, and it literally takes minutes to throw in the crockpot (and smells wonderful!). Having the meat pre-browned helps, but it’s still disgustingly simple…basically opening a few cans (and yes, I use free-range beef, low-sodium. organic beans and diced tomatoes, and no-MSG taco seasoning! )
